Note: these crocks are used to create lacto-fermented sauerkraut, pickles and kimchi. The crocks have a moat around the edge which when filled with water creates a natural airlock, reducing the risk of harmful bacteria spoiling the process. If you have ever wanted to try out this traditional method of fermentation, this is a great way to get started
