This week has been a baconfest LOVEFEST!!! Behzad and I picked up a Whetstone Farm lamb order this past Saturday at the Neighborhood Roots Winter Market in Minneapolis after the farmer sent me an email and I discovered she sold lamb belly. The lovely Whetstone farmer, Emily Hanson, asked me what I was going to do with all of the lamb ribs/belly and after sharing how difficult it is for me to find pristine fat sources without any traces of grain (U.S. chicken and pork) she told me about salmon belly! I was also fortunate enough to receive an order for beef bacon ends (2 ingredients: 100% grassfed beef & sea salt!). I absolutely LOVE making (& eating!) 100% grassfed beef bacon bits. Crispy perfection and heavenly happiness! Both times I made it this week I ended up eating all of it at once! #sodelicious! #solucky! #thankyousomuch @uswellnessmeats
Behzad LOVES both of these discoveries as well but he is able to eat pork sausage, pork bacon, pork bratwurst, cheese, cream, butter, nuts, nut butter, avocado, etc (all fat sources much easier to find throughout the entire year), so I guard my secret supply for survival:).
