Please Please Please Put the Bones Back in T-Bones!!! Another Happy Week No 71

We picked up one of our yearly steers from the butcher and found out that many butchers have stopped creating bone-in cuts! I'm hoping that this trend will change but for now am so bummed about the tragic loss of t-bone steaks!!! 

I remember reading in several sources and in this book about the many health and culinary benefits of bone-in cuts! Flavor, nutrition and deliciousness! Please please please put the bone back into t-bone!!! 

Many people often wonder how much is a whole steer?! The "hanging weight" is what the butcher determines and then I send a check to the farmer depending on how much the farmer charges per pound! Usually for a whole beef steer 100% grassfed in the Midwest it is between $3.25 and $4.00 per pound. Then the butcher cuts the animal into all of the cuts and charges the customer a cutting fee (usually around $400). This is what a 496 pound animal looks like after cutting: 


It all fit easily into the back of a Subaru Forester! And then it fit easily into two chest freezers.

I finished listening to this audiobook and then looked up this video on YouTube! WOW!
